mini whole wheat muffins + chocolate chips!
This is my "let me down gently" snack for when I'm trying to get off eating four boxes of girl scout cookies in one weekend. I call these muffins semi-healthy because they're made with whole wheat, coconut oil, dark chocolate and minimal sugar. However, they do contain eggs, milk and well... sugar. Long story short they're probably better for you than girl scout cookies but they're no vegan rabbit food either. They also have a habit of disappearing mere moments after exiting the oven, they're that good.
2 cups whole wheat flour
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 egg
1/3 cup loosely packed brown sugar
1/4 cup coconut oil, measured as solid, then melted
2/3 cup + 4 tbsp milk
1 1/2 tsp vanilla extract
1/2 cup mini dark chocolate chips
1/2 cup finely chopped nuts (I like walnuts)
Preheat oven to 350 degrees. Line a mini muffin tin with liners. In a medium bowl combine flour, baking powder, soda and salt, mixing well to combine. Set aside.
In a large bowl whisk together egg and sugar until smooth. Add melted coconut oil along with vanilla extract and mix well. Add milk and whisk until combined. Then stir in the dry ingredients mixing until just combined. Slightly lumpy batter is ok. Fold in chocolate chips and nuts until mixed throughly.
Fill each liner to the top. Bake for 10 minutes, or until the tops are set. Remove and let cool for a few minutes. Devour immediately! ;)
